Savoury Pancake Recipe: Mushroom & Bacon

As I'm sure you are already aware, it is Pancake Day tomorrow. If you haven't already been to the shops to pick up your flour, eggs and milk, perhaps you could think about doing something a little bit different. In the past, I've always stuck to the tried and tested 'lemon and sugar' topping, but this year I decided to do stuffed crepes instead.

So if you fancy cooking up a storm in your own kitchen, here is my bacon and mushroom pancakes recipe:

Ingredients (serves 2 people)

  • 325ml semi skimmed milk
  • 150g plain white flour
  • 1 large egg
  • Handful of baby spinach
  • 7 medium/large mushrooms
  • 1 clove of garlic
  • Pack of bacon lardons
  • Knob of butter
  • Handful of mozzarella cheese
  • Salt and pepper for seasoning

Making your stuffed pancakes

  1. Finely slice mushrooms and garlic - fry in a pan with a small amount of oil until starting to brown
  2. Add bacon lardons to the pan and season with pepper as required
  3. Prepare pancake batter with milk, flour and egg - I use Nigella's method
  4. Turn down the heat on the pan with the mushrooms, bacon and garlic, and add baby spinach leaves to wilt
  5. Cook pancakes in a large non-stick frying pan with butter; set cooked ones aside until all batter is used
  6. Turn on your grill to a medium/high heat
  7. Meanwhile it is time to stuff your pancakes; do these like a fajita, adding a pinch of cheese into the mix before folding
  8. Place stuffed pancakes into the grill and take out when the cheese has melted
